A frugal dinner....

 When asparagus is 88 cents a pound (at Sprouts)....its time for soup....
 I always start most of my soups with the trio...carrots onion and celery...saute in olive oil..
 add some salt and any other spice you like, I add a few red pepper flakes too....
 then I add the asparagus and about 4 cups of water....
 I reserve the tips...
 then I add some chicken stock from the jar....its way cheaper than buying chicken stock, if you have homemade, even better....and I always use the tablespoon that Ms. Red gave me because it tastes better....
 let it simmer til the vegies are soft......
 then get your immersion blender...I LOVE this thing!!! and blend away...
 add some cream if you have it...
 then add some milk.......and the tips and simmer away...if you want it thicker mix up some butter and flour and let it simmer...
 then make some homemade croutons from an old loaf of bread you have in your freezer...
ENJOY!!!!!!!!!!!!! this dinner cost about maybe 5 bucks......probably not quite...and theres plenty to freeze for another day!!!!

AAAACCKK!! I need that right now. Especially the homemade croutons! I love my immersion blender too. If my husband liked soup I'd make it almost daily.

Your soup sounds great! I don't have an immersion blender but I think I could survive and still make this recipe! YUM!
